
Cooking Classes
October 2007
I am very happy to announce that the Montecito
Country Kitchen Autumn 2007 Series will begin on 24th September
2007 in the charming Masini Adobe in Montecito. The classes will
feature seasonal produce from our wonderful farmer’s markets.
This series will comprise 6 evening classes. As always the classes
will feature a 2-hour cooking demonstration with some student
participation followed by a dinner and wine tasting of the meal
prepared.
Our 24th series opens with the delicious Tuscan Food, Wine and
Cheese Dinner – the seventh in our regional foods class
with Tony Princiotta from the Cheese Store in Beverly Hills.
The dinner will begin with a Warm Glazed Fig Salad, followed
by Oregano Roasted Game Hens with a Sauté of Cavalo Nero,
Tomatoes and Garlic. We will then sample the wonderful cheeses
of Tuscany and end the meal with Poached Peaches in Cinque Terre
Wine with Fresh Ricotta and Honey. A great selection of their
wines, cheese and gourmet food products will also be for sale
on the day of the class.

boil them in the packets. Within a month of meeting our Mediterranean
friends she was preparing delicious, original three course
meals at the drop of a hat. Seriously, it is extraordinary
what can be achieved by the steady acquisition of traditional

On October 1st we will sample the Pleasures of the Pacific -
a dinner that highlights the bounty of the Pacific Coast. We
will start with a succulent Salmon Sashimi Salad and continue
with Whole Roasted Bass, stuffed with a Fragrant Herb Tapenade
and served with Lemon and Mint Couscous. The meal ends with Slow
Glazed Apples and Calvados Crème Fraiche.
On October
8th we will dine with the owners of C’est Cheese – Kathryn
and Michael Graham, who will bring their delicacies to share
with us. A Watercress and Hot Porcini Mushroom salad is our first
course, followed by a fragrant Duck main course, served with
Roasted Grapes and Saffron Onions. The dessert for this class
is a silky, sensuous Lavender Honey Pot de Crème.
On October 15th and 22nd we will celebrate the season with The
Flavors of Autumn Dinners – two meals that showcase some
of the seasons best regional produce such as Herb Filled Ricotta
Feuilleté with Farmers’ Market Fresh Autumn Salad
and a Pistou Vinaigrette, a Poached Spearfish with Green Peppercorn
Nage, Wilted Mustard Greens or an Autumn Apple, Ginger and Almond
Cake. These autumnal dinners are a feast for the palate.
I have been
taking classes from Pascale for almost ten years now. I have
not only learned a tremendous amount of information from
Pascale, but have thoroughly enjoyed each and every class.
Pascale shares so much with each class, and each class I
learn something new and different. From where to buy the
best meat in town, to where to buy the best copper ware in
Paris, France, as well as all her favorite places in St.
Tropez! Not to mention all the wonderful products that Montecito
Country Kitchens produces. I can’t imagine making salmon
without their lemon olive oil. Or roasting tomatoes without
their Italian herb mixture.
There is so much to learn from Pascale, and I now have the pleasure of
taking classes with my daughters. Another generation of students of the
Montecito Country Kitchen!

The series will end on October 29th with our annual Dinner for
the Festive Season. After champagne and Hors d’Oeuvres,
we will make a Veloute of Courgettes and Shallots, followed by
Double Lamb Cutlet Mini-Roasts, a Mirepoix of vegetables and
a delectable and decadent Potato and Truffle Gratin. The evening
comes to a close with Muscat Braised Pears served with Apple
Crumble Ice Cream
