'Spring' is a collection of delicious menus that celebrates the new crops of the year. Recipes for the first pickings of white asparagus or a Provençal onion tart, and an Italian spring salad; main course that feature the best of the new season, a warm duck salad, roasted Cornish hens with apricots and ravioli ai funghi, and of course luscious desserts that highlight the fruit of the spring, a peach tart, an apricot clafoutis, mango soup with gingered raspberries and a new lemon tart to name a few.

All of these have been beautifully photographed and we have included timing schedules for all of the menus, the keys to success for each of these and lots of food folklore. We hope that you will will enjoy these recipes as much as we have enjoyed creating them for you.
